Just because you’re diabetic, it doesn’t mean that you can’t enjoy food. But you also shouldn’t be bedridden and irritable with a spike in blood sugar just because you’ve indulged in a delicious dessert.
Here are 5 recipes that let you have your cake and eat it too!
Lemon Berry Cream
The tofu in this dessert gives you a boost in protein while the blueberries provide you with fiber to balance the sugars. Plus, it’s really delicious.
Ingredients
- 1 package silken tofu, extra-firm, drained
- 1 lemon, juiced
- Zest from 1 lemon
- ½ C raw honey
- 1 C fresh blueberries
Directions
- Place the tofu, lemon juice, ½ of the lemon zest, and honey in a blender.
- Blend until smooth, scraping down the sides as needed.
- Pour into four bowls, scraping out the contents of the blender as needed.
- Place a handful of blueberries each per bowl and garnish with remaining lemon zest.
Grilled Stone Fruit
My dad used to grill stone fruit for us every summer after he would barbecue literally every item of our dinner. Bread, potatoes, meat, lettuce … even our dessert went onto the grill. It was easy, fast, and delicious, not to mention healthy!
Ingredients
- 1 lb of your favorite stone fruit (peaches, plums, apricots, nectarines)
- Coconut oil
- Raw honey
- Cinnamon
Directions
- Cut each fruit in half, top to bottom, and remove the seeds.
- Brush coconut oil on the halved fruit.
- Place the fruit on the hot grill, cut-side down. Grill for 2-4 minutes or until beautiful charred lines appear.
- Carefully remove with tongs or a metal spatula. Transfer to a plate.
- Drizzle with raw honey and sprinkle with cinnamon.
Strawberries N’ Cream
This dessert is seriously so easy and feels so indulgent that you’ll wonder why you aren’t eating this daily. And guess what? It’s guilt-free!
Ingredients
- 1 can of full-fat coconut milk, refrigerated
- 1 tsp of vanilla extract
- 2-4 tbsp of raw honey, depending on taste
- 1 C fresh strawberries, sliced
Directions
- Remove the can of coconut milk from the fridge and flip upside down.
- Carefully open the can and notice that the fat has separated from the liquid. Drain the liquid into a separate container (save for another treat, later!).
- Scoop out the hardened coconut fat and place into a food processor.
- Add the vanilla extract and raw honey. Puree until smooth. Pour some of the coconut liquid as needed to facilitate processing.
- Scoop the cream into a bowl and garnish with sliced strawberries.
Cinnamon Date Shake
Dates are my favorite natural dessert because they are super sweet but also loaded with vitamins, minerals, and natural fiber. Just a few, and you have everything you need in this tasty dessert!
Ingredients
- 2 C plain Greek yogurt
- 3-4 medjool dates, soaked and pitted
- ¼ tsp cinnamon
- ½ – ¾ C milk, as needed
Directions
- Soak the dates in water for about 20 minutes to soften. Remove the pits and peel the outer skin off (if you’d like) for easy processing.
- Add everything to a high-speed blender and blend until smooth. Pour into a tall glass and enjoy!
Flourless Chocolate Chip Cookies
These cookies have been all the rage in the blog world and also in my kitchen back in the States. That is because they’re delicious, stupidly easy, and full of protein.
Ingredients
- 1 C raw or toasted almond butter
- 1/4 cup of packed light brown sugar
- 1 C miniature chocolate chips
- 2 eggs
- ½ tsp of sea salt
Directions
- Preheat oven to 350°F.
- In a large bowl, add all of the ingredients. Stir until well combined.
- On a greased baking sheet (or lined with parchment paper), scoop about 1 tablespoon of dough, spaced about 1 inch apart.
- Bake for about 10 minutes or until they are puffy and golden.
- Remove from oven. Cool for a few minutes before transferring to a wire rack to cool.
